I am eternally thankful for all of the resources I have at my fingertips living in NYC, but nothing can replace the community of women I feel so fortunate to be surrounded by. Paige, Vice Blendy of my favorite LuliTonix and straight up magician goddess in the kitchen is definitely one of those people. She is bursting with positive energy and puts so much love into everything she does. Paige is a constant inspiration and I am thrilled she is joining us today to feature her delicious (and healthy!) gluten-free, vegan chocolate mint cupcakes.

Not only are these fun to make but they are free of refined sugar! A perfect treat and sure to be a hit amongst friends and loved ones.

Choc Mint Almost Raw Vegan Cupcakes [Serves: 30 small cupcakes / 15 large cupcakes]

1 cup Shredded Organic Coconut
1 cup Organic Teff Flour or Teff Seeds Chia Gel ( 1/3 cup Chia Seeds + 1.5 cups water)
1.5 cups Organic Medjool Dates
1 Cup Organic Raw Cacao Powder
3 Tbsp Sunflower Seed Butter (or any Nut butter)
1 tbsp vanilla extract
2 drops Essential Mint Oil (or mint extract) pinch himalayan salt

• Mix all ingredients together in a food processor until smooth (if it’s not mixing well, add a little more water)
• Scoop into cupcake holders
• Bake on low in preheated oven (200F) for 25-30 minutes*
• Remove cupcakes from tray & let cool down *OPTIONAL – simply set in your refrigerator if preferred RAW over baked

1 cup Organic coconut butter (sub for Cashews if you want it creamier!)
3 Tbsp Organic Raw Honey (sub Coconut Nectar/Agave/Coconut Sugar if Vegan)
1 tsp vanilla extract
1 pinch himalayan salt
3 drops Essential Mint Oil (or mint extract) 3 mint leaves (optional color)
3 Organic Baby Spinach leaves (optional color)

• Mix all ingredients together in food processor or Vita-Mix on high speed until creamy scoop onto cupcakes (around 1 tbsp per cupcake)
• Place cupcakes in refrigerator to set for 15-20 minutes
